I have heard the Chefs behind Moto speak and I think they are onto something very important. I agree that there is way to much waste in our consumption of food and I also agree that we have become overly selective in what we consume. Both of these factors only result in more increased commodification of food and decreased selection in what we eat. 

But, while molecular cooking offers many solutions, I can&#039;t help but wonder if it is really just one part of a much larger solution. After all, Molecular cooking requires a massive amount of energy and chemical work to succeed and, when applied to an entire food system such as the US system, I am not sure if it will turn out to be a more sustainable than what is currently in place.</description>
